Spiced Persimmon Old Fashioned

Ingredients

  • 2  oz Bourbon

  • 1 oz lemon juice 

  • Juice from one clementine

  • 1 dash orange bitters

  • 1-2 tablespoons persimmon puree*

  • Splash of ginger beer

  • Cinnamon stick (optional garnish)

Equipment

  • Mixing glass or shaker with strainer

  • Citrus squeezer

  • Festive, chilled coupe glass

Recipe

A very festive variation on the old fashioned includes a spiced persimmon puree.

Puree Recipe -

2 ripe fuyu persimmons, peeled and chopped

½ cup real maple syrup

1 cinnamon stick

Heat on medium until low boil. Cook 5-8 minutes or until persimmons are mushy. Remove from heat and cool. Remove cinnamon stick and puree in the blender. Cool and save in a glass jar. Keeps in refrigerator for 2 weeks or longer if you add a teaspoon of vodka as preservative.

For the cocktail - Add the first five ingredients to a shaker with ice and shake until well chilled. Strain into a chilled coupe and top with high quality ginger beer. Garnish with a cinnamon stick.
