Ingredients

handful of mint leaves

1 ounce dark rum

1 ounce white rum

1/2 ounce velvet falernum

1 ounce lime juice

1-2 sugar cubes or 1 teaspoon demerara or turbinado sugar

2-4 ounces soda water

Equipment

Muddler

Shaker

Hawthorne strainer

Fine mesh sieve

Tall glass filled with ice

Recipe

Gently muddle the mint leaves in the shaker with a bit of lime juice and the sugar. Add rum, remaining lime juice, falernum and ice and shake to chill well. Double strain into a highball or other tall glass filled with ice. Top with soda and garnish with more mint and a wedge of lime. Best served with sandwich! (Note - some people like to build the drink in the glass, as shown above, and don’t worry about straining mint through their teeth).
