Cheater Pina Colada

Ingredients

1 ounce Koloa dark rum

1 ounce spiced rum

¾ ounce Velvet Falernum

½  ounce lime juice

2 ounces fresh or frozen crushed pineapple (or more)

1/2 of a Mexican Coconut ice cream bar

1/4 to half cup crushed ice

Equipment

Blender

Rocks or high ball glass

Straw or tiny umbrella (optional)

Recipe

This cocktail was a spontaneous Friday night concoction creation because I had some crushed pineapple on hand and the coconut ice cream bar. La Michoacana is a great brand for this drink because it has shredded coconut in the bar and it is just sweet enough to balance the tartness of the lime and pineapple (falernum helps balance as well) . The proportions are for just one drink but it’s way better if you make a full blender (quadruple the ingredients listed above). Crush the ice in the blender with the pineapple and then add all other ingredients and run it until liquified. Pour into glass of crushed ice. Add straw or tiny umbrella. Swim up bar not included.
